Hi Ben! You do not need to cook the chickpeas if you are buying them from in a can, as they are already cooked. It is only if you are buying them raw.

Do you have to use a roasted beet for this recipe? I’m always pressed for time so can a raw cold beet work in replacement? I bought a pack from Trader Joe’s there’s about 10 small beets in the package, but I’m not sure how many to use as the equivalent.

Hi Megan! That may have been a little confusing, but the instructions were in the beet cupcake recipe!
Here they are:
Preheat oven to 375°F, remove the stem and most of the root from your beets, and scrub and wash them underwater until clean.
Wrap beets in foil, drizzle on a bit of canola oil, wrap tightly, and roast for one hour or until a knife inserted falls out without resistance. They should be tender. Set in the fridge (in a bowl to catch juice) to cool to room temperature.
Once cooled, either finely grate or puree beets in a blender (adding orange juice or water to encourage mixing). Measure out 1/2 cup and set aside.

This is one of the best dips not only because of its color but because of its color which is really appealing to the kids.. This bright magenta is found in clothing, color pens/markers and so on but rarely found in food. My daughter couldn’t wait to have it. Health is indeed beautiful!
The changes I made:
1) I steamed the beet instead of roasting.
2) I added about half a teaspoon of salt not just a pinch.

I made this last night and it was a hit with my reluctant-to-switch-to-a-plant-based-diet-because-he-really-loves-meat boyfriend, so that’s a step in the right direction.

I made hand-made pizzas and used the beet hummus as a base, and topped it with some feta cheese, olives, spinach, and rainbow cherry tomatoes. He loved it, and it was one of the most beautiful meals I’ve ever made!

This afternoon I used the rest of the beet hummus on burgers, served with avocado, onion, some more feta, black olives, and tomatoes. Again, it was a hit, it looks BEAUTIFUL and it goes so well with everything, plus I’m sneaking more and more veggies into every meal and he doesn’t even notice.

I realize this recipe is from forever ago, but I just tried it, and i’m wondering if you have any tips to help me make my hummus less bland? Every single time I attempt homemade hummus, it doesn’t have that tangy-ness that store-bought seems to have.

Tastes good. I used love beets and even added extra beet juice from the bag but still only a pink fleshy color. Probably has something to do with it not being a freshly roasted beet. I’ll try that next time.

This was delicious and looked so pretty! I ended up making it with black beans instead of the chickpeas because that is what we had on hand. Also, I just recently discovered your website and recipes and absolutely love them! So delicious! I’ve made this a few times but the most recent time, the grocery store had no regular beets and only golden beets. I figured might as well try and make it and it tastes just as good but looks like regular hummus! I made this exactly as the recipe says and it’s one of the best dips I’ve ever made – super tasty, colourful and healthy. Luv that it’s more lemon zesty and colourful than regular hummus! I can see this being a regular thing for me to make for years to come.

Awesome base recipe that made it easy to spice up to my funky taste needs! Which for this particular recipe simply meant adding a bit of yellow curry to taste… :) nothing store-bought can “beet” this homemade hommus! Something about the tanginess seems just right, compared to the store brands which tend to have excess citric acid for preservation purposes, at the expense of the flavor’s balance. Just my picky observation. Baham ko'rganingiz uchun tashakkur!

Is there a way to make this without the oil?

You can make it without the oil (I did my first batch by accident w/o oil) but the consistency isn’t quite as smooth.

I make my hummus without oil. I use water in place of the oil.

Used this for a Wedding reception…BEAUTIFUL! We put them into diagionally cut bread cups with brightly colored veggies sticks. They were a HIT! Almashish uchun rahmat.

Waaaaaay too much tehini! It totally overpowered the subtle sweet beet flavor. I had to doctor it up by adding 3 more cloves of garlic and a whole other lemon to kill that nut butter feel on the tongue and back of my palette. BTW: rating stars are stuck at at least 3. I would give this two stars even after i altered it to save it. As written, only one : (

Yes a little too much tahini it dominated the flavor so I added more roasted beets and it tasted fantastic. Next time I will cut back a little on the tahini.

Voy. Maybe you used really old, very small garlic cloves, but I used one-quarter the amount the recipe called for, and it was so garlicky none of us could eat it. Such a shame since I spent all that time roasting a single beet to make it. It was lovely to look at, though.

It says 2 whole cloves not 2 whole bulbs, perhaps that is the problem? Jess

Can canned beets replace the roasted beet?

I used about half a can of beets, drained. I also used homemade chickpeas, so I used plenty of salt. I sprinkled some chipotle red pepper on my portion and we dipped carrot sticks, black olives, and Kalamata olives. I was pleasantly surprised by my first taste of beets!

Mazali! Had some raw beets already chopped up for smoothies – so didn’t cook/roast – but still turned out delicious. Put it on olive oil fried nan topped w/ sautéed lemon spinch :D

can you use soy sauce in place of tahini?

I love this recipe and followed it closely but my hummus did not turn out bright pink! Har qanday taklif? I used 3 baby beets instead of one regular but the color was totally muted. I want it to pop like in these gorgeous pics. Any help is appreciated.

Okay, if you have not used can beets, you can try that or just peel off the skin of the whole, organic beet and roast it (as mentioned) in the recipie. If that does not work or you have tried both ideas, tell me because I have a few more ideas. :)

I think you should bake your beets with the skin. What I do is: scrub the beet cut a bit at top and the bottom, rub some oil on the skin, season w/salt add a bit of water cover tightly, bake it use your beets as needed. They are beautiful in color, much sweeter and peeling is much easer. You won’t loose much of the beets flash. Good luck

Let me give you a little hint. You know that fabby Red Velvet cake that almost everybody goes gaa-gaa over? The original was NOT made with half a bottle of red food coloring (yuckie aftertaste from that stuff) — it was created with ground up cooked beets. The secret is to add some acid to the cake batter. Usually that is a bit of vinegar or substituting buttermilk for the liquid. That acid helps keep the color bright instead of turning brownish. I would suggest that you amend the recipe to use more lemon juice or add a tablespoon or so of a gentle vinegar. I like a citrus infused rice vinegar from the Oriental Foods aisle of my supermarket. This hummus already has a bright light citrus flavor from lemon juice and lemon zest. Play with it to bring up the acid pH balance.
Citric acid (also known as Sour Salt used in Kosher cooking) would work — just be careful not to totally overpower the basic flavor of the dish.

Ushbu retsept uchun rahmat. My friend gave me a sack full of cooked beets and I hate the thought of just throwing them out. Chickpeas and beets sound like a marriage made in heaven to me. After all, every Greek salad I have ever seen has sliced beets on it, right? This one sounds sooooo good! (What about adding a little spoonful of kalamenta olive spread in, maybe instead of the salt?)

How To Make Jalapeno Hummus

Here’s what you’ll need to get started:

2 cans chickpeas (garbanzo beans)
3-5 jalapenos
2 ohak sharbati
15-20 sprigs cilantro
5 garlic cloves
1/4 chashka tahini
1 choy qoshiq kimyon
1 choy qoshiq tuz
freshly cracked black pepper
3 osh qoshiq zaytun moyi
splash of water

Add everything to a blender or food processor and give it a whirl.

If it won’t combine readily simply add another splash of water.

Using three jalapenos is a good place to start for a version with medium zip. If you want more heat simply add another jalapeno, blend, and take another taste. More info on working with jalapenos.

I added another jalapeno (4 total) and another generous pinch of salt to this batch.

You’ll get a vibrant, fiery batch of Hummus that is definitely multi-purpose!

As mentioned, I’ve been using it to turn a cheese quesadilla into a quick meal:

Simply load up half a flour tortilla with cheese, fold onto itself, and give it a few minutes per side in a dry skillet over medium-high heat. Hello five minute meal!

These taste best when the quesadilla is warm and crispy, so try to serve them right off the skillet.

And by the way, take a look at this starting point for an alternative combo:

That’s a layer of Jalapeno Hummus on a warm, crispy tostada. Seeing lots of possibilities?

That’s what I thought too! But I can’t get this combo to work as the Jalapeno Hummus does not seem to get along with the corn flavor of the tostada. Your palate may disagree on that one so keep it in mind if you want to do some experimenting.

And one other option to consider….

Tahini is a paste made from ground sesame seeds and most Hummus recipes rely on it. You can find it in jar form in any supermarket.

I’ve tried this recipe without tahini and while it’s still in the Hummus realm, I prefer it when it includes tahini. In contrast, we’ve made an Avocado Hummus in the past and I actually prefer that version without the tahini, so keep in mind that there is some wiggle room on the tahini.

If curious you can do a before and after to see how your palate reacts. Simply add all of the ingredients except the tahini to a blender, combine, and take a taste. Then add the 1/4 cup of tahini, combine, and take a taste. Which do you prefer?

Either way, you’ll end up with a heaping 3 cups worth of Jalapeno Hummus — store leftovers in an airtight container in the refrigerator where it will keep for a few days.

And if you tend to forget what leftovers you have on hand once they go in the fridge (anyone?) then it can be a real treat to re-discover some Jalapeno Hummus for those nights when you don’t feel like cooking.

Edamame Humus

Minneapolis is one delicious city. I haven’t unpacked my bags yet, but I have a list of recipe ideas from the past week and can’t wait to recreate them. Let’s procrastinate on unpacking and catching up on emails for a bit longer and talk about a much more pressing matter—edamame hummus. Have you tried it yet?

I got a taste of edamame hummus at a nearby sushi restaurant recently, then I discovered a tubbed version at Trader Joe’s, and then I had to make some myself. It’s rich, lemony, and high in protein (so is the traditional chickpea kind). It’s green, too, thanks to the edamame, which are green soybeans. I buy frozen, shelled edamame and defrost them in a pot of boiling water.

The word “hummus” is derived from the Arabic word for chickpeas, so this chickpea-free hummus is quite untraditional. To balance edamame’s very green flavor and fibrous texture, I had to use a little more tahini, lemon juice and water than my go-to herbed hummus recipe.

Combined with crisp veggies or whole-grain crackers, edamame hummus is a delicious, healthy snack or appetizer. If you need a break from standard hummus (horrors!), please give this one a shot! I’ll be sharing a fun appetizer concept featuring this hummus in a couple of days.


Slice the Onion, Pepper, courgette & crush garlic.

In a frying pan fry onions (I use 1 kcal spray, but olive oil is also fine). After around five minutes, when the onions are starting to soften add pepper & courgette as well as garlic & mixed herbs. I would propose adding herbs & spices you enjoy it doesn’t have to be what I suggest – everyone has different tastes. I like black pepper so I sprinkled a little of that in too.

After around ten minutes, the onion, peppers & courgettes had been simmering & were soft. Add Taifun Tofu, Haricot Beans & fry for a further five minutes & then add the Sheese. Mix the Sheese in, it will only need about thirty seconds to a minute for it to melt. Make sure it melts & goes sticky. This is by far the best way to eat this.

I served this with a tasty salad, gluten-free bread & plenty of houmous!

Breakfast – served with beans, Gluten-Free toast, mushrooms, sweet potato hash browns.

Lunch – on Gluten-Free Toast with your favourite sauce.

Dinner – served with plenty of fresh salad, warm Gluten-Free roll & houmous.


Green Goddess Hummus

  • Pishirish vaqti: 5 daqiqa
  • Total Time: 8 minutes
  • Yield: 1 ¾ cup 1 x
  • Turkum: Aperitif
  • Cuisine: Lebanese

This delicious green hummus recipe is flavored with fresh herbs! Use classic green goddess dressing herbs like me or change it up with other fresh, leafy herbs. (You’ll want to use 1 cup or less fresh herbs, to taste.) Recipe yields about 1 ¾ cup hummus.

Tarkibi

  • ¼ cup tahini
  • ¼ cup fresh lemon juice (about 1 large lemon’s worth)
  • 2 tablespoons olive oil, plus more for serving
  • ½ cup roughly chopped, loosely packed fresh parsley
  • ¼ cup roughly chopped, loosely packed fresh tarragon or basil
  • 2 to 3 tablespoons roughly chopped fresh chives or green onion
  • 1 large garlic clove, roughly chopped
  • ½ teaspoon salt, more to taste
  • One (15-ounce) can of chickpeas, also called garbanzo beans, drained and rinsed
  • 1 to 2 tablespoons water, optional
  • Garnish with extra olive oil and a sprinkling of chopped fresh herbs

Ko'rsatmalar

  1. Combine the tahini and lemon juice in the bowl of your food processor (a smaller food processor will be better suited to the job) or high-powered blender (i.e. Vitamix or Blendtec). Process for about 1 ½ minutes, pausing to scrape down the bowl of your processor as necessary.
  2. Add the olive oil, parsley, tarragon, chives, chopped garlic and salt to the whipped tahini and lemon juice mixture. Process for about 1 minute, pausing to scrape down the bowl as necessary.
  3. Add half of the chickpeas to the food processor and process for 1 minute. Scrape down the bowl, then add the remaining chickpeas and process for until the hummus is thick and quite smooth, about 1 to 2 minutes more.
  4. If your hummus is too thick or hasn’t yet blended into creamy oblivion, run the food processor while drizzling in 1 to 2 tablespoons water, until it reaches your desired consistency.
  5. Scrape the hummus into a small serving bowl. Drizzle about a tablespoon of olive oil on top and sprinkle with additional chopped herbs.
  6. Store hummus in an airtight container and refrigerate for up to one week.

Fresh Garlic and Lemon Juice: It’s ideal to crush your own garlic for this hummus so that it’s really fresh. And then it’s also ideal if the lemon juice is freshly squeezed. And then you soak the crushed garlic in the fresh lemon juice for 5 minutes so that it takes some of the bite out of the raw garlic and the end result is really tasty!

Tahini: A good quality tahini is also really important and to this end, I like to use a tahini that tastes pretty good on its own. Soom is a great brand that you can get on Amazon.

The Spice Factor: So the spiciness comes about from a little cayenne pepper. You can also use cajun spice or even a dash of chili powder. This part is entirely optional, and it’s also a very good idea to add a small amount to start and taste test and then add more as you like.

Getting it smooth: When it comes to hummus you get the best taste and texture when it’s really smooth. The best way to get it smooth is just to let your food processor run for a good few minutes! If your food processor isn’t up to the task of getting it really smooth, then an optional additional step is to move it to your blender for a final blend before serving.
